Potatoes is considered one of the most important vegetable crops in Egypt. The cultivated area with potatoes has reached about 200.75 thousand Feddan per year through the period of (1988-2003), such that the total production per year was about 1.8 Million ton, and the average quantity exported around 219 thousand ton through the same period. The study aims to investigate the economic factors which directly affected potatoe production such as : cultivated area, total product, farm price, cost production per feddan, the amount of exports and the value of exports for potatoes. The results has shown the increase of cultivated area and total production through the first year of study period compared with the last year of study period. This result may be due to the increase of the cost of production which reached about 3879 LE per feddan in 2003. Also the result showed that the average individual consumpation reached 27.1 K.g yearly. The result has shown that the important market for Egyptian potatoe exports are the European Union countries that imported about 76.5% from total Egyptain potatoe exports.
